Breakfast Muffins fer Dinner?

What was I thinking about? Well... the recipe said it's "Breakfast Muffins" but don't or should I say rarely have breakfast. At home that is. In the office is a totally different issue. You spent most of your waking hours in that place sooo... putting in breakfast in ya schedule's no big deal. UNLESS... there's people hounding you! Then, breaky's OUT! Still, I made these breaky muffins for our dinner. We only had these for dinner. "B" had planned for an earlier night coz we've been sleeping past 2-ish am for the last couple of days. Donno what we've been doing. I blame the time. It went about too bloody fast OR were we too bloody slow?!? NO! The former.
Preparing the muffins were easier than cooking dinner. In 40 minutes flat they were done baking. This timing's inclusive with the preparations too aites! The recipe was suppose to be a just plain old boring spiced muffins, so I added in dried whatever fruits I had and moulded them into the batter. Results = Yummilicious! Yet "B" still commented that the fruity fillings weren't enuf. Yeah "B", want me to serve an extra side-dish of dried fruits for you??! So on each bite, you can stuff yourself silly with the additional fruitties??? Grrrrr..... Ok, he declined.
Ingredients for Breakfast Muffins
1 3/4 cups AP flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon
1/3 cup canola / vege oil
3/4 cup white sugar
1 egg
3/4 whole milk
dried fruits - raisins, peaches,figs, dates etc (opt)
Method
In a bowl, combine flour, baking powder, salt, nutmeg and cinnamon. In another bowl, combine thoroughly oil, sugar, milk and egg. Add liquid mixture into dry mixture and stir only to combine. Add in dried fruits. DO NOT OVERMIX or it'll get tough. Bake @ 180'C for 25-30 minutes.
