Our Baked Western Dinner
I was pretty tired after the cookie bakings. So, dinner was all oven baked. My favourite way of cooking. Easy clean-ups and a whole meal can be cooked in there. Just have the temperature going right and set the timer. Whilst all those are cooking, I can have a bath. I like the colours of tonight's dinner. Pretty...! Here's a run through on each of them. Ok, enuf bakings for tonight. After logging off, I'm having a can of coke and of to zz-land. Nitey-nitez!
Ingredients for Chilli Padi & Soy Sauce Baked Chicken
red chilli padi - pound
1 garlic - pound
soy sauce
tomato sauce
Marinate chicken with all above and leave overnight. Bake at 200'C for 40 minutes.

Ingredients for BlueCheese Fritata
2 eggs - beat
milk
salt
bluecheese
Mix all into the beaten egg. Pour mixture into muffin tray. Bake @ 200'C for 15 minutes. fyi - These will bloat in the oven but deflate when you take them out.

Ingredients for Baked Pumpkins & Potatoes
local pumpkin - cubes
Russet potatoes - cubes
1 tbsp extra virgin olive oil
salt to taste
Mix everything up and bake @ 200'C for 20 minutes.
