Mixed Beans Puffs

Heeheheh... I'm so on a roll with these puffy things... Had a couple tins of assortment of beans that'll be just right with these puffs. Let me see... I got Kidney Beans and Pinto Beans. With an additional mix of potatoes and other ingredients. A filling made. Got to make these real quick coz I've made the fillings a day beforehand. It was awefully simple and resulted into delicious pieces of snacks.
Tonight we had no 'real' dinner. Apart from the puffs, I baked some leftover vege popiahs. "B" took out the last batch of the Double Pistachio Turkish Delights and a bag of Jack & Jill potato chips. Had a can of pineapple juice each. Emersing ourselves with our respective reading materials, me with Reader's Digest and "B" with Today paper, we munched ourselves away... Once in a while, we broke away from reading and checked out what Totally Spies from Disney Channel were up to...
Ingredients for Mixed Beans Puffs
1 can Kidney Beans
1 can Pinto Beans
2 potatoes - diced
1 red onion - chopped
2 garlic - chopped
1/2cm ginger - chopped
1 tbsp curry powder
1 tsp chilli powder
1/8 tsp ground cumin
1/8 tsp ground cinnamon
a pinch of nutmeg
dried rosemary
dried basil
salt to taste
olive oil
water
Method
Heat oil and put in chopped onion, garlic and ginger. Saute till they sweat. Add in potatoes and then curry powder, chilli powder, ground cumin, cinnamon and nutmeg. Mix well. Add in a little water so that the mixture will not be too dry and burnt. Add in all the beans. Mix well and cover. Let the ingredients soak in the water and add in salt to taste. Lastly add in rosemary and basil. Set the fillings a side to cool before putting them into the pastry.
