Varied Basmati Fried Rice

Remember those leftover Basmati Rice from last weekend? Alrite, here are the variations of fried rice I came up with. Check them out.



(1) Recipe for Chili Sambal Fried Rice

Blended ingredients into a paste:
10 dried chilies, 1 onion, 3 garlics, little water and pinch of salt

cooked rice - leftover rice are better
1 onion - diced
2 tbsp oyster sauce
1 tbsp tomato sauce/puree
1 tbsp sweet chili sauce
1 tsp sugar
pinch of salt
1 hotdog - sliced
1 fishcake sliced
1 egg
Brocolli
Olive oil for frying

Method
Heat up olive oil and sweat diced onions. Then put in 2 tbsp chili paste or more if you prefer it hotter. Fry till the chilli's dried up. Add in oyster sauce, tomato sauce, sugar and salt. Add in the fillings of hotdog, fishcake and brocolli. Stir for a cuple of minutes then add in 4-5 scoops of cooked rice. Mix well. Make a well in the centre and break in egg. Wait for the egg to be half cooked and mix well with rice. Note - if you mix the rice when the egg's still liquidish, you'll end up with a soggy fried rice. Unless if you prefer it like that. I like mine semi-dry.


















(2) Recipe for Olives & Onions Fried Rice

cooked basmati rice
Extra Virgin Olive Oil
12 pickled pitted black olives - sliced
2 onions - sliced
2 cloves garlics - diced
minced meat
cabbage or any greens
1 carrot - sliced
pinch of salt
1/2 cube Knorr chicken stock
2 fresh basil leaves

Method
Heat up extra virgin olive oil and saute onions and garlic. Add in minced meat and stir till meat is cooked. Throw in the sliced black olives. Add in Knorr chicken cube and salt. Add in cabbage and carrot. Lastly add in the basil leaves and rice. Mix well.


















(3) Butter Veg Fried Rice
cooked Basmati rice
Extra Virgin Olive oil
2 sticks salted butter
1 onion - diced
1 inch young ginger - sliced
pinch of salt
carrot - sliced
celery - sliced
button m'room - sliced
raisins
white pepper
dried oregano

Method
Heat up extra virgin olive oil. Add in butter, onion and ginger. Pinch of salt to taste. Add in carrot and celery. Put in the cooked rice and mix well. A dash or two of white pepper and dried oregano. Mix well and serve.


















(4) Black Pepper Oyster Fried Rice
cooked rice
olive oil
1 onion - diced
2 garlics - diced
3 tbsp oyster sauce
2 tsp soy sauce
2 tsp black sauce
Weatherford Serendipty Salt
crushed black pepper
dried basil and oregano
cabbage - sliced
canned button mushroom - sliced

Method
Heat up oil and saute onion and garlic. Add in m'rooms and stir. Add in oyster sauce, soy sauce, black sauce and Serendipity Salt. Add in cabbage and rice and mix well. Crushed a couple of black pepper seeds. Then add in dried basil and oregano. Mix well with rice and serve.

Phew... lucky the rice ran out after the fourth fry. I had fun doing the variations day after another just so I don't waste any rice. Now to do some baking... cheerios...
