Sunday's Bakings

I was down with flu. So, didn't go out... hah rubbish... I did went out the whole night. From one end to the other end of Spore Changi-Tuas end-back homey. Reached home at 6am! I can't sleep well coz of the flu and decided to do some baking. Baked 3 things:-
First - Apple Pie
Ingredients for Apple Pie Crust
1 1/2 cups AP flour
1/3 cup whole milk
2/3 cup vege oil
Mix with a fork.

Ingredients for fillings
3-4 Granny Smith apples - skinned & sliced
1 cup brown sugar
1/8 cup AP flour
1 1/2 tsp cinnamon powder
1 tsp nutmeg powder
2 tbsp butter - room temp
Mix all in a bowl. Pour all into the rolled crust pastry (base). Cover with another rolled crust pastry (top). With a fork, poked wholes on the crust so that it'll not bloat and burst while baking. Bake for 40 minutes @ 180'C or till crust browns.

Second - Chocolate Chip Biscotti. I've read the recipe numerous times and thought it was pretty ez. Since I had lotsa chocolate chips to spare, why not.
Ingredients
2 cups plain flour - sifted
1/2 tsp baking soda
1/4 salt
3/8 white sugar
3/8 brown sugar
2 eggs
1/8 tsp vanilla essence
1 cup chocolate chips

Method
Mix the sifted flour, baking soda and salt in a bowl and put aside. Beat the eggs and stir in the sugars and vanilla essence. Pour in the flour into the egg mixture slowly and miw thoroughly. The batter should be very sticky.
Place a piece of parchment paper on a baking tray. Divide the batter into two. Scoop out the batter and spread it in a baking tray. Flattened the mixture to an inch high with the back of your spoon. Do the same for the next batter. Bake for 150'C for 35 minutes. Take out and leave it to cool for 10 minutes. Cut with a sharp knife at an-inch each. Bake for another 12-15 minutes on each side till they turned golden brown. Cool them and store in air-tight containers

Third - Cherry Tomatoes Pizza
