Potato & Cheddar Cheese Sandwich

I had a craving for potatoes and made this dish. I threw in whatever I had including of course the Russet Potato (me fav). I wanted to have it with instant prata or chappati or naan but none of them were in the freezer. So a sandwich with a thick slice of cheddar cheese will do just fine then. Toasted the bread with cheddar cheese to give that extra kick...!

This dish is a keeper as it is so versatile that it can be a filling for sandwiches, wraps, pies, puffs, pastries, pizza toppings etc. You can even eat it on it's own!
Ingredients
2 russet potatoes - diced
1 onion - diced
2 cloves garlic - diced
1 carrot - sliced
1 celery stick - sliced
brocolli
several button m'rooms
2 eggs or more - whisked with a pinch of salt
pinch of salt
dried oregano and basil
fresh parsley - chopped
honey tomatoes
olive oil

Method
Boil potatoes first then nearing the end, add in carrot, celery and brocolli. Drained them and put aside. Heat up oil and saute onion and garlic. Add in button m'rooms. Add in eggs. When the eggs' half done, add in the boiled items and mix. Eggs are just to coat and combine all ingredients into one. Big pinch of salt, oregano, basil and fresh parsley. Mix well and lastly add in the honey tomatoes. You can dash in some pepper too. A little bit of soy sauce/fish sauce if you prefer too.
