X'mas Eve Supper

Made these for supper after coming home late (yet again). I had to be in the office to finish up what I've left the day before. Later I went 'jalan-jalan' (walked arnd) a witsy bit. Bought some corn cobs and baked them with my leftover Sesame Chicken. Had my hands on some darn cheap shitake and enoki mushrooms at Carefoure Plaza Singapura. Whipped up a noodle dish with Ee Mee aka Crispy Noodles (dried egg noodle) and all tasted fantabulicious! Had my supper in front of the teevee watching Oceans 11. After that off to bed...! Zzz...

Ingredients for Sesame Chicken with Mushrooms
(Sesame Chicken marinate as per previous post)
Bake corn cobs and mushrooms together with chicken.
Added in sliced onions too. Juice from chicken will cook them and they'll add-up as a sidedish later.
Remember to seal them with aluminium foil so as not to dryout the juices. This time I didn't brown the chicken as I wanted them moist.

Ingredients for Fried Ee Mee
Ee Mee aka Crispy Noodle (can find this in any supermarket)
Shitake mushrooms (as desired) - sliced roughly
Enoki mushrooms (as desired) - sliced roughly
or any mushrooms for that matter
1 onion - sliced
2 garlic - chopped
1 tbsp oyster sauce
1 tsp soy sauce
1/4 Knorr Chicken cube
Black pepper - crushed
White pepper
Breadcrumbs - to thicken sauce (opt)
Olive oil
Water

Method
Saute onion and garlic in olive oil. Add in mushrooms and saute till limp then add in water. More water = more sauce. Mine had lotsa gravy at first but dried up eventually (sigh*). Let it come to a boil and add in all other ingredients and stir. Breadcrumbs added for desired thickness of sauce. Lastly, add in Ee Mee and switch off burner. Cover pot. Ee Mee will soften. If you were to cook it through with the burner on, Ee Mee will turn limp and soggy fast. But this depends on individual. Next time, I'll try to retain as much sauce as poss. Btw, this taste just like Horfun only with a different noodle base. You can make do with seafood, meat, chicken or just veges too. Same base, just different fillings. Happy trying!
