Clear Fish Soup

Hieyaaa peeps...! It's been moons since I last updated. Apologies... I wasn't well. Now, slightly better and catching up what I've lost. I did some cooking but mostly were one dish meals of fried rice, fried noodles, simple 1 stir-fry dish with white rice or most of the time and most of the time bread were my best saviour. Other times, it was Mommy dearest who'd supply me with her cookings.
Now that I'm better and bursting with new charged energy, I made a simple clear soup for dinner one night. Had came across a packet of Song fish at NTUC and bought them. With whatever I had at home, I plonked them all in and had this soup on its own. Made "B" Green Chillies Belacan Fried Rice to accompny with the Fish Soup.
Clear Fish Soup
Ingredients for stock:
4 cups water
2 handful soy beans
2 handful ikan bilis
2 handful mixed veges
salt to taste
1 tbsp soy sauce
Ingredients in soup:
2-3 white fish fillets - sliced
(with or w/o bones)
oyster mushrooms
pickled veges - sliced
1 tomato - wegded
1 green chilli - sliced
1 silk tofu - sliced
white pepper
Method:
Boiled water and add in soy beans, ikan bilis and mixed veges. Add salt and soy sauce when soy beans rose to the top. Add in fish slices, oyster mushrooms, pickled veges, tomato wedges, green chillies, silk tofu and a dash or two of white pepper. Bring to a boil than simmer till fish are cooked. Appx 20 minutes depending on thickness of fish slices. Generally, fishes cook fast. Serve hot with rice, rice noodles (so become Noodle Fish Soup) or just having on its own. Refreshing. It'll be great if you have some chilli padi slices and soy sauce to dip in. Mmmmmm.....
Ingredients for Green Chillies Belacan Fried Rice
8-10 green chillies - chopped finely
1 onion - chopped finely
1 garlics - chopped finely
1 handful ikan bilis - chopped
1cm belacan - baked slightly
cai xin vege or any vege
1 egg
salt to taste IF neccessary
white pepper
cold rice
vege oil
Method:
Heat oil and sweat onions and garlic. Then add in chopped ikan bilis and fry till crispy. Add in baked belacan. Break an egg an mix well. Add in cold rice (best to use yesterday's rice). Add in veges, salt and white pepper. Stir-fry well till all combine and off heat. Serve hot.
