I named it "Tuncheeze Pizza" & "PCC"

Hah.. I just wanted a hip name. "Tuncheeze" = Tuna + Cheese. Am in the mood for pizza again. But tonight's a different version. Tomato base and lotsa veges/fruits. To accompany the pizza, I made "PCC" = Peach Cup Crumbs. Took me an hour to do everything from scratch. The results were goood! An addition to me recipes!

Ingredients for Tuncheeze
1 can tuna in brine
1 onion, small - finely chopped
1 capsicum, small - finely sliced
some canned pineapples - cut to small pieces
1/2 carrot, finely diced
black olives - sliced
5 sliced cheese
grated cheddar

Ingredients for pizza base
3 eggs - beat
5-6 slices white bread (depends on how big baking tray is)
Butter - for spread

Ingredients for pizza sauce (mix all)
Chili sauce
Pasta sauce (coz I had some left. Tomato sauce will do ok too)
Sweet chili sauce
Peri-peri sauce

Method
Spread butter on 1 side of each bread and place the buttered side onto the base of baking tray. Line bread up compactly. Pour beaten eggs over and let it soak. Pre-heat oven to 180'C and bake soaked bread for 3-5 minutes. Take out tray and spread mixed sauce on top. Bake for 3-5 minutes. Take out and lay sliced cheese first then spread tuna evenly. Then sprinkle onions, capsicum, pineapples, carrots, black olives. Top with more sliced cheese (cut to smaller pieces) and spread cheddar generously. Mozarella cheese will be better so that you'll have that string effect when you pull the pizza. Bake 200'C for40 minutes.

(1) Ingredients for PCC cups
1 cup all purpose flour
1/3 cup vegetable oil
1/6 cup (half of 1/3 cup) UHT milk

(2) Ingredients for fillings
4 halves canned peaches
4 tbsp brown sugar
3 tsp all purpose flour
1 tsp cinnamon powder
sprinkle of nutmeg

(3) Ingredients for top crumbs
1/4 cup brown sugar
2 tbsp all purpose flour
2 tbsp butter - semi-cold
1 tsp cinnamon powder

Mix (1) in a bowl with a fork. Flatten dough with a rolling pin and cut with a circle cutter. Place it in the muffin baking tray. Mix (2) and fill each cup. Mix (3) in a bowl with a fork and sprinkle on top of each cup. Bake at 200'C for 35-40 minutes.

Yep, satisfied with the results! Coz of that, I treated myself with an additional dessert.
